Winter is the perfect time to harvest salted dried fish in Zhoushan, East China's Zhejiang province.

Cleaned and deboned fish such as yellow croaker, sea eel, and hairtail can all be pickled and dried, with the yellow croaker being the perennial favorite since the Song Dynasty (960-1279).

Using dried fish to make porridge is highly popular among locals. The fish can also be roasted or fried.
